Smoked Lancaster Colby
Smoked Lancaster Colby is a lower moisture version of Jack cheese, Colby cheese is aged over 60 days for flavor “Medium” Colby refers to a mellow flavor profile which is a result of aging. “mild” cheeses have a lower flavor profile, “Sharp “ cheeses have an higher, bolder flavor profile, again due to the length of age and type of cheese.
We cut white Colby into 5 ounce pieces to be individually smoked on a rack using natural wood smoke. Smoked cold to prevent melting which occurs over 90 degrees for extended time. Creamy texture. Clean smoke flavor. Golden brown, (not blackened). Shown marks of the smoking rack on bottom of piece
