During our grading, a small number of cheddar blocks are identified as EXCEPTIONAL candidates for a UNIQUE LEVEL of aging … pushing the cheddar out to 7 years aged and more. This “Reserve cheddar” is available in very limited quantities. A small taste will bring big, complex flavors to enjoy. Pair it with your favorite complementary beverage or enjoy it by itself. Many people enjoy the robust flavors that come from the line of Old Quebec cheddars, but few realize the time and attention it takes to bring this flavor experience to their table. The process starts at a rural cheese plant in the province of Québec, Canada. Cows grazed in the Saint Lawrence River Valley provide some of the highest-grade milk for production, the first essential ingredient in cheese. Then a carefully guarded, proprietary starter culture and cheese-making process yield what could be an exceptional cheddar.

*Recently we entered our 7 yr. aged Old Quebec Cheddar into the World Cheese Awards in Norway. We are proud to finally announce that we have received a silver medal award! 4502 Cheeses from 45 different countries all came together to find the best of the best. Every type and every style were offered to the discerning palette of the judges who used their years of expertise to identify the masters of the craft. It was a privilege and honor to be part of this process and to offer our Aged Cheddars to this scrutiny. While we may be partial to our cheddar it is a privilege to know that others agree that we offer some of the finest cheddars in the world.
