What Is Our Scrapple Made Of?
While pork meat is the primary ingredient of our country scrapple, it also includes a precise blend of other ingredients, including pork skins and livers, buckwheat, cornmeal, salt, pepper and other spices. We combine these ingredients into a loaf and roast them until the meat is firm. We then chill the loaf in pans and slice it for packaging and serving.
What Is Country Scrapple?
Scrapple traces its origins to 16th-century Germany, where it was referred to as “panhas,” which means “pan rabbit.” The dish enabled cooks to use virtually every part of the pig and maximize resources during a time when food shortages were common.
In the late 17th century, German immigrants brought their panhas recipes with them when they settled in Pennsylvania and became known as “Pennsylvania Dutch.” Locals began calling the dish “scrapple” because it contained scraps of leftover meat from butchering pigs.

Scrapple originated in the Pennsylvania Dutch communities, particularly in Lancaster and the surrounding areas. It was created by German settlers who brought with them the traditions of using all parts of the animal. To this day, it remains a regional specialty.

I moved to Tucson, AZ, from Nazareth, PA, way back in 1990. Until then, I didn’t realize just how regional scrapple is and just how hard (read that, “nearly impossible”) to find outside S.E. I grew up scrapple and ring bologna. My grand parents lived in Lessport and one block from their home was a butcher shop. Today I am 73 years and my family really enjoys scrapple and ring balogna. We have retail stores that sell ring bologna here in Green Bay but there is no comparison. Scrapple isn’t found anywhere in the state of ,Wisconsin.
