The old expression of eating “high on the hog”, refers to the loin which is the highest part of the pig. The loin is known for its leanness and great texture when cured. This is the same cut as a fresh pork chop, but it is cured and smoked.
The cooking process sets a very smooth texture which is accompanied by an excellent flavor. This product is a “bone in” item. The boneless version of this cut is Canadian Bacon.
